Wagyu (pronounced ‘wag-you’) is a breed of cattle originally native to Japan and considered as one of Japan’s national treasures. Some people may be familiar with ‘Kobe beef’. Kobe beef is Wagyu that comes from the Kobe region in Japan. One of the main specifities of wagyu beef is the highly marbled meat. This marbling gives the beef its “melting” texture, tenderness and unique flavour.
