The word tandoori is from the same family as "tandoor" which designates the large traditional oven in which food is cooked on a spit. It is an Indian mixture of coarsely ground spices. The word "Masala" is used in India to refer to a mixture. There are 25 spices recommended in Ayurveda, the main ones being: ginger, peppers, long pepper, turmeric, garlic, pomegranate, cardamom, fenugreek, ajwan, mint, saffron , cloves. The whole art lies in the choice, the dosage and the combination of these spices in a clever alchemy: this is the infinite diversity of masalas.
