It is a perennial plant with green foliage that produces oval-shaped fruits approximately 2 cm in diameter, full of seeds. Unlike ginger, it is not the rhizome that interests us but the fruits (pods) from the plant which contain these small, fragrant seeds. This washed and then dried fruit constitutes green cardamom. The smell of Cardamom is camphorous and penetrating. Its flavor is peppery, bitter and astringent. Refreshing with a soft, sweet and warm taste. Under the term cardamom we find the seeds of several plants linked to different botanical families:
