Sumac ( Rhus coriaria ) is a shrub that grows wild in Sicily, on the highlands extending from Turkey to the Caspian Sea and throughout the Arab countries. The spice consists of dried red berries that turn a dark brick red color. The berries are picked before maturity and dried in the sun. These berries have little aroma and a pleasantly sour taste, astringent without being caustic. In the Middle East, sumac was used to prepare a sour beverage, reputed to be great for relieving mild stomach disorders. Our sumac powder contains 5% salt. The simple purpose of adding salt, without altering the taste of the product, is to extend the life of the product and preserve its beautiful color, without which the product could not be kept for more than a few months.
