This pepper of the Capsicum anuum species, Gorria variety, comes from a plant from the American continent introduced to Spain on the return of Christopher Columbus. After establishing itself in the country of Castile, it established itself in the Basque country, particularly in the region around Espelette. In August, the red fruits are harvested by hand, then placed on racks for natural drying for three weeks. Then each fruit will be hollowed out to remove the tail and seeds and sorted. Finally the peppers are dried at 45°C in a ventilated oven and reduced to powder.
