Long pepper grows on the slopes of the Himalayas as far as South India and Indonesia. It is a perennial climbing plant, with dark green leaves, adorned with spikes of white flowers. It matures in seven or eight years and then bears fruit for fifteen to twenty years. The cultivation of long pepper, unlike that of black pepper, requires dry soil, at altitude, very fertile and well drained. The almost ripe fruits are harvested and then dried in the sun. The aroma of long pepper resembles that of black pepper, namely a woody, fresh, spicy and pleasantly aromatic scent, but less spicy and with a slightly sweet note.
