Fennel seeds - 300g

Fennel is a large and graceful plant with green branches and numerous small yellow flowers giving off a penetrating sweet smell similar to that of anise. The cut, tied and hung stems are dried so that the seeds fall off. The seeds of 5 to 10 mm are oblong, elliptical, green to yellow-brown in color. The taste of fennel seeds is close to that of anise with a slight camphorous note.
