Oyster mushrooms are better when cooked, and as with all mushrooms, sauteeing is the preferred method. Pre-heat a non-stick saute or frying pan over high heat, add a splash of high-quality olive oil and a handful of mushrooms, reduce the heat slightly and keep tossing the mushrooms in the pan until golden. Once cooked add chopped fresh herbs such as chives, chervil, tarragon, parsley, a small amount of diced butter and a sliver of garlic. Allow a further 2 minutes in the pan then serve.
