Raised on small, manageable farms, all John Stone cattle have an abundant natural diet of grass and herbs in the summer and silage in the winter. They are treated with respect and have access to dry, comfortable shelter and fresh drinking water. It’s this healthy and varied diet that adds to the meat’s marbling and flavor. Meat is then dry-aged during a minimum of 3 weeks according to the traditional technique "on the bone".
