TAPAS Tomato with mozzarella and anchovy recipe

INGREDIENTS FOR 4 PERSONS

  • 12 Ortiz anchovies in olive oil
  • 350g high quality tomatoes Jardin du Rabelais
  • 600g mozzarella di buffala
  • 1 clove of garlic
  • salt
  • basil
  • 4 pieces of bread
  • balsamic vinegar
  • olive oil
  • salt and pepper

METHOD 

  1. Grill the slices of bread with a little olive oil.
  2. Peel the garlic clove  and rub it on toasted bread to flavour.
  3. Drain and chop the mozzarella, cut the tomatoes into small pieces and the basil into strips . 
  4. Prepare the bruschetta: add mozarella, cherry tomatoes, basil, anchovies and lemon zest on top of the bread.
  5. Season with a pinch of salt, pepper, olive oil and a drop of balsamic vinegar.
