1. Put the fromage blanc to drain 3 hours in advance in a strainer/colander (optional). Turn on the oven at thermostat 5 (150 ° C).
2. Mix the dry cakes with the melted butter. Line the mold with this dough, spreading it by hand or with a fork. Bake it for 10 minutes, then take it out and let cool.
3. Grate the lemon zest. Wash and hull the strawberries, keep a few peices pieces for decoration. Cut the others in half.
4. Mix the cheese with the crème fraîche, add the caster sugar, vanilla sugar, flour, eggs and lemon zest. Blend for 30 seconds.
5. Arrange the strawberries on the dough in the pan. Pour the white cheese cream over it. Bake for 1h10.
6. Let the cake cool. Unmold it and decorate it with the reserved strawberries.
7. This cake is to be enjoyed super fresh.
8. You may accompany with a red fruit coulis.
