Burrata, shaved asparagus, radish and cucumber salad

INGREDIENTS

  • 120g of burrata
  • a big handful of sliced radishes
  • half a cucumber diced
  • a handful of asparagus
  • 5 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp lime juice
  • salt and pepper to taste

METHOD

Snap the tips off the asparagus and make thin slices with them. Make thin shavings with a vegetable peeler with what’s left.


Prepare the dressing combining the oil, vinegar, lime juice, salt and pepper and whisk everything together.


Arrange your ingredients on the plate and top it with burrata and the dressing. Enjoy !
