The fruit of Dipteryx odorata looks like a large brownish-yellow plum when ripe. The fruits are not picked from the tree, but collected after they fall. They are left to dry until their shells become easily breakable, the seeds thus released constitute the “ tonka bean ”. This seed or tonka bean is oblong, very slightly compressed, it is 3 to 4 cm long and 1 cm wide. Its brown, blackish and shiny envelope is marked with longitudinal wrinkles. It contains an odoriferous substance, colorless and very aromatic, with a burning flavor: Coumarin which gives it this particular aromatic smell which is reminiscent of sweet clover and vanilla.
