The caramel is made in our workshop to which we add Guérande Fleur de Sel.
Fleur de Sel is the thin layer of white crystals that form and level with the surface of salt marshes, usually by the evaporating action of the wind. The salt crystals remaining on the surface of the water are much finer than those of coarse salt. They dissolve very quickly and therefore penetrate well the foods they season.
