Scallops carpaccio with sesame seeds


INGREDIENTS FOR 4 PERSONS

  • 500g fresh raw scallops
  • 2 tbsp of extra virgin olive oil
  • 2 tea spoon of sesame seeds
  • half lemon
  • 2 sprigs of chives

METHOD 

1. Wash and cut the scallops into slices of about 3 mm. Basically, slice the scallop into 3 in a horizontal way. 

2. Divide the slices evenly among cold serving plates.

3. In a bowl, combine the juice of ½ lemon with olive oil, chopped chives and sesame seeds.

4. Salt and pepper the scallops then cover them with the preparation, you may use a brush.

5. Add some lemon zest.

6. Serve very chilled. 

Secret tips : you may add a bit of passion fruit seeds to bring a bit of acidity.
