Cut from the short loin, the striploin consists of a muscle that does little work, and so it is particularly tender.

Béarnaise sauce: Finely chop the shallots and tarragon. In a pan, put a glass of red vinegar, 2 shallots and a sprig of tarragon, finely chopped. Let reduce then add crushed egg yolks, salt and diced butter. Whisk over low heat until the sauce thickens.
