Sprinkle the cube roll with salt and pepper. In a frying pan or - even better - a cast iron pan able to go to oven, sear the meat on all sides: both sides but also the top and sides. Then place in a preheated oven at high temperature, 8 to 15 minutes per kg depending on its thickness. Once cooked, let it rest for a time equal to that of cooking to allow the juices to spread. The fat must be crispy, the meat having a beautiful red color, with soft and tender flesh. Wagyu meat must be served rare.
