Raz el hanout is a mixture of traditional Moroccan spices. It is indispensable in tagines, couscous, and pastillas, but is also easily used in Western cooking.

Its composition is masterful, containing up to 30 ingredients, according to the taste and inspiration of the individual spice maker. Certain ingredients, however, are essential: cumin, cubeb pepper, ginger, nutmeg, turmeric, cinnamon, fenugreek and green anise.

Raz el hanout has a hot, spicy, sweet and salty taste that is, pleasant and enchanting, with complex and harmonious notes.
