This cheese is firm, slightly crumbly. It has a smooth, and oily coating, dotted with big flakes of truffle.
The balance of flavours brings forth a truffle rich earthy profile.
An excellent table cheese, but being one of a very few truffle cheeses that captures the real flavour of truffle, it is also great to cook with, adding a real depth of flavour to any dish. And lastly it marries well with bold red wines, Italian preferably!
