Toasted wholemeal brioche slices "Biscotti" baked in Tuscany - 25g / 2 slices

A revisited classic of Biscottificio Mattei, these whole wheat "Biscotti della Salute" are great for a tasty, healthy, traditional breakfast. They are slices of brioche bread, pleasantly thick (about 1.5 cm) and expertly toasted, perfect to use instead of the usual industrially-produced rusks. The secret of these wholemeal biscuits consists in the double and slow rising of the brioche dough. Once baked, the still soft bread is cut and left to rest for 24 hours. The slices are then toasted to get a nice golden colour and the typical crumbly, light consistency.
