Made each year in the traditional way with the fresh catch of the season, the sardines are cleaned by hand, their bones removed by hand, then dried and browned in vegetable oil. After that, they are drained for at least 2 hours to make them more digestible. Finally, they are canned by hand and then covered with cold extracted extra virgin olive oil. Prepared the old-fashioned way, by hand, they bring you the best of the flavours of the sea and the nutrients of sardines. These sardines improve with time. Already very good in the first year, they will be even better in subsequent years. The sardines will become increasingly soft and candied in their oil, especially if you turn the can over at least every 6 months.
