Livarot is a soft washed rind cheese, made from cow's milk, that is very famous in the Normandy region of France.

This cheese is protected by the Appellation d'Origine Contrôlée since 1975. The cheese is typically sold in cylinders with an orange rind that is wrapped with five bands of reed called as laiches.

Each Mons cheese is individually "affine" or refined meaning treated according to the technical process that create, ripen and develop cheese: regulated temperature, humidity, position within the different caves, whether the cheese should be kept wrapped or unwrapped (and if so, what in), and on what the cheese should rest - great slabs of wood, or straw matting.?
