The fresh black winter truffle (tuber melanosporum) is a jewel among mushrooms and the favourite of Gourmet chefs. In France, it is referred to as “the diamond of Périgord”, in reference to its quality and to the area where it is harvested. Périgord is a southern French region of Provence known for its robust, earthy truffles. The winter black truffle is the noblest and strongest-tasting of all the truffle varieties. It is harvested only from November to March.

Grate it into sauces, or thinly slice it into omelettes, pasta or rice. Its earthy and pungent aroma will elevate the flavour profile of your favourite dishes.
