Muscovado sugar - 120g

Muscovado is an unrefined cane sugar rich in molasses, which affords it a liquorice taste that will seduce young and old alike.

At the beginning, there was the sugar cane plant. It was often harvested manually as the land was not suitable for machine harvest, there being too many stones or too steep slopes. Immediately after harvest, the cane was crushed and the juice collected. The juice, “vezoul” was then filtered to remove any impurities.
The filtered juice was heated to evaporate a large quantity of water untill a critical point where the cane sugar could be extracted and molasses was formed.

We get the black sugar and the Muscovado sugar from cane sugar with molasses.
