This mixture of herbs and spices is the fruit of the ingenuity of those French who had to learn to survive in a foreign land. It is made of thyme, red onions, paprika, hot peppers, cumin and black pepper and makes a delicious stock for shellfish.

It is very aromatic, with spicy and hot notes.

Specification	The word "Cajun" comes from "Cadien" who are the descendants of the Acadians. Those French from New Scotland were sent in Lousiana because they refused to swear allegiance to the British crown.
