SICOLY®’s frozen and sweetened morello cherry purée is made from a mixture of different varieties of morello cherries picked at optimum ripeness in our producers’ orchards in the Monts et Côteaux du Lyonnais.
The selected morello cherries are processed into fruit purée in Sicoly production facilities.
The pulp obtained is then de-aerated in order to eliminate any risk of micro-oxidation and is heat treated by a special, ultra-rapid ohmic heating process, which contributes to preserving all the organoleptic qualities of the fresh fruit (flavour, colour, texture).
