Yuzu and strawberry granita with coriander

- 500ml mineral water

- 150g sugar

- 100ml yuzu juice

- 1 pinch of espelette chili pepper

- 1/4 bunch of fresh coriander

- 250g gariguette strawberries

- 50g yuzu peel

- 3 tpsp strawberry pearls

- 4 tbsp red fruit puree Sicoly




  1. To make the sugar syrup, in a small saucepan, combine the water and the sugar to the boil. Cook over medium heat, stirring until sugar has dissolved, about 2 minutes. Cool to room temperature.

  2. Add the yuzu juice, cover and freeze 2 to 3 hours, until partially frozen. Scrape granita with a fork to make it flaky. Freeze for another hour and scrape again. When ready to serve, scrape again.

  3. Separately, dice the yuzu peels and the strawberries into small pieces.

  4. In a separate bowl, prepare the yuzu-strawberry mixture by mixing the yuzu peels, strawberry dice, 1 pinch of espelette chili pepper, chopped coriander, strawberry pearls and the red fruits puree, mix gently and keep in the fridge.

  5. Just before serving, use again the fork to get flaky crystals.

  6. To serve, spoon alternating layers of granita and yuzu-strawberry mixture into serving glasses, and serve immediately.
