Keep the meat out of the fridge at least 5 to 10 minutes before preparing. If it is in vacuum pack, open it so that the meat gets oxygenized. It will avoid any temperature shock which would generate a tension of the tissues.
Choose the right fat for the cooking : Use grapeseed oil as its taste is neutral and can be heated up to higher temperature than any other oils.
You shoud use the right pan fry : a stainless steel pan fry is preferred. Pour the grapeseed oil , let it melt, place the pieces of beef steak and let them get a golden crust on both sides. The cooking process should use a high and constant temperature source with the least manipulation possible. Once both sides are golden, the temperature can be reduced and the meat can be cooked up to the desired cooking stage (rare, medium, done). If you like it rare, you can stop the cooking process once the sides are golden. If you prefer a medium cooking, you can cook it 2 to 3 more minutes and if you like it « done », 3 to 4 more minutes.
Make sure the heat source is very high in temperature. Grease the meat with grapeseed oil and press it on the grill following the above advice.
