We, all, feel like eating light and fresh when temperatures are high. Try this pure Scottish salmon tartare recipe made with the best part of salmon.
Ingredients:
400g Scottish salmon fillet (kinglas)
1 tbsp balsamic vinegar orange label
1 tbsp extra virgin olive
1 lime juice
1/2 lemon juice
A small bunch of chives
Method:
Cut the salmon fillet into slices, then cut the slices into small cubes.
Add the balsamic vinegar, the olive oil, the lime juice, the lemon juice and the chives.
Keep in the fridge one hour before serving.
Serve very fresh in a small transparent glass or on top of a hand-made cornet !
