Take the octopus out of its packing and let it defrost in the chiller. Rinse it.
On a cutting board, cut the octopus into strips.
Add the lemon juice, the olive oil and season.
Cut the garlic clove in tiny pieces and add it.
After washing the parsley, cut the heads and add it.
Mix and let it rest in the chiller for 35/45 minutes.
At your convenience, you may add thin slices of red onion and a pinch of paprika.
Serve it cool with steam potatoes.
