Quinoa is one of our favorite ingredients as it is light, healthy, easy to digest and with a mild taste. It is the perfect componenent for many salad variations. We invite you to try this original recipe associating quinoa, feta cheese and chicken.
- 300 gr quinoa
- 1/2 piece of diced feta cheese
- 2 pieces of organic chicken breast
- 1 tbsp of satay
- 1 tbsp goma seeds (roasted sesame)
- 1 tbsp chopped fresh coriander
- 100 gr snow beans
- 2 pieces of sliced spring onion
- 2 tbsp of extra virgin olive oil
- 2 tbsp lime juice
1- Put the rinsed quinoa, salt and water into a pot and bring it to a boil.
2- Cover and simmer gently until the quinoa absorbs all the water, about 10-15 minutes. Remove from heat and let sit for 5 minutes.
3- Place into a large bowl and fluff up with a fork to help it cool more quickly.
Marinate the chicken:
1- Slice the chicken; place it into the bowl with 1 tsp of satay and 1 Tbsp of olive oil. Mix well. Keep in the fridge for 30 minutes.
2- In the pan, bring the water with salt to a boil. Add the snow beans, cook 2 to 3 minutes or until tender. Drain and cool the snow beans with cold water.
3- In a nonstick pan, medium heat, add some olive oil and fry the chicken on both of the sides with salt and pepper. Keep at room temperature.
4- In a large bowl mix together the quinoa, feta, fresh coriander, snow beans, spring onion.
5- Season the quinoa salad with lime juice, olive oil, salt and pepper.
6- Add the chicken on top of the salad with some goma seeds. Serve immediately
