Light, lean, and full of protein, "green lentils du Puy" are one of our favorite ingerdients for every cooking. We love the nutty taste of this product ! Lentils can be associated with a lot of differents ingerdients and make wonderful healthy salads.
- 300gr green lentils du Puy
- 1 piece chabichou goat cheese
- 1 green apple
- 2 tbsp hazelnuts
- 1 small red onion
- 1/2 lemon juice
- 1 tbsp pommery mustard
- 2 tbsp raspberry vinegar
- 2 tbsp walnut oil
- 1 tbsp chopped fresh parsley
- 4 pieces cherry tomatoes
1- Place the lentils in a large saucepan with cold water, bring to a boil. Reduce heat to medium-low, and cook 25 to 30 minutes, or until lentils are tender. Drain and rinse with cold water.
2- Dice the green apple and add ½ lemon juice
3- Dice the red onion
4- In a small bowl, mix together the lentils, green apple, red onion and parsley.
To prepare the dressing:
1- Whisk together the pommery mustard, raspberry vinegar, walnuts oil, salt and pepper.
2- Just before serving, crumble the lentils on top of the salad with some chabichou, goat cheese and walnuts, then add the dressing sauce and serve immediately .
