INGREDIENTS
- 450g of pasta (preferably capellini)
- zest and juice of 2 lemons
- 150 g of top quality caviar
- olive oil
- melted butter
- salt and pepper
METHOD
Fill a pot with water. Once it boils, add salt and a drizzle of olive oil. Cook the pasta al dente, drain it and keep some of the cooking water. Toss the pasta with melted butter, lemon juice, salt and pepper.
Serve the pasta and top it with a generous amount of caviar. Garnish with grated lemon zest and serve immediately.
