- 1 egg yolk
- 1 cup avocado oil
- 1 tbs lemon juice or vinegar
- 1/2 tsp mustard
- 1/4 tsp salt
1. Remove egg from refrigerator about 30 minutes prior to making mayonnaise.
2. Into a wide mouth jar, combine egg yolk, mustard and salt. Whisk until blended (about 30 seconds).
3. Using 1/4 teaspoon measure and whisking constantly, add 1/4 cup La Tourangelle avocado oil to yolk mixture, a few drops at a time, about 4 minutes.
4. Add at the end lemon juice or vinegar.
