Ribeye is the butcher's favourite due to its fantastic flavour. John Stone beef is grass fed and matured for a minimum of 21 days according to the traditional technique "on the bone".
John Stone beef has a deep red colour, which is characteristic of well-aged beef. A bright red colour does not necessarily indicate the meat is either fresh or good quality, simply that it has not been given the time to fully mature.
